Big Mama's Spice Rub
Lamb Chops Recipe

Ingredients
- 4 x Lamb chops
- 1 x Tablespoons of Big Mama Spice Rub* (your favorite blend)
- Sea salt & freshly ground black pepper (to taste)
- 2–3 tbsp olive oil or sunflower oil
- 100 ml passata (or adjust to your preference)
*Add more, teaspoon by teaspoon, if you like it extra spicy!
Step One: Season & Marinate
- Generously massage Big Mama Spice Rub into the lamb chops.
- Sprinkle with sea salt and black pepper to taste.
- Wrap or cover the chops and refrigerate for at least 1 hour, or overnight for deeper flavor.
Step Two: Roast
- Preheat oven to 190°C (170°C fan) / Gas 5.
- Place lamb chops in a semi-deep roasting dish.
- Mix the olive oil with the passata and pour over the chops.
- Cover with foil and roast for 30 minutes.
- Remove foil and continue roasting for 10 minutes until the chops are beautifully browned.
- Remove from oven, loosely cover with foil, and let rest for 5 minutes before serving.
Serving Suggestion
Hot Tip: Serve with roasted potatoes, steamed greens, or a fresh herb salad.
