Big Mama's Spice Rub Pan-Fried Red Fish Recipe

 

Ingredients

 

  • 3 x washed, scaled and cleaned red fish
  • 1 x Tablespoon of Big Mama Spice Rub (add more if you like it extra spicy!)
  • ½ lemon
  • Salt & freshly ground black pepper
  • Grab a large plastic container and add fish pieces tothe  container
  • Add 2 x large tablespoons of Big Mama spice rub to fish in the container 
  • Shake well to ensure the fish is well coated in Big Mama spice Rub
  • Cut half a lemon and squeeze juice into the marinade
  • Cover, and leave in fridge for  at least 2-3 hours

 

 

Step Two: Cook the Fish

  1. Preheat oven to 190°C (170°C fan) / Gas 5.
  2. Prepare seasoned flour; Add paprika, black pepper, salt, and 'season all' to self-raising flour.
  3. Add fish pieces to the seasoned flour in a container and shake to ensure each piece of fish is coated.
  4. Heat olive oil or sunflower oil in a medium-sized frying pan over a medium heat.
     
  5. When the oil is hot enough to make the fish sizzle gently (but not smoking), add the fish.
  6. Remove each piece as it browns to a baking tray
  7. Add a baking tray to the oven and remove it after 10 minutes

 

 

Serving suggestion:

 

HOT TIP: Great with a vibrant green salad; chopped Romain lettuce, sliced vine 

tomatoes, and chopped cucumber
