Big Mama's Spice Rub 
Pan Fried Fish Recipes

Ingredients

  • 1 whole fish or fillet (Sea Bass, Salmon, Mackerel, or Red Snapper)

     
  • 2 x Tablespoons of Big Mama Spice Rub

     
  • ½ lemon

     
  • Salt & freshly ground black pepper

     
  • 2–3 tbsp olive oil or sunflower oil

     

Step One: Prepare the Fish

  1. Clean: Wash and scale the fish thoroughly. Pat dry with kitchen paper.

     
  2. Score: If using whole fish, lightly score the skin at ½ inch (1 cm) intervals.

     
  3. Season:

    • Rub Big Mama Spice Rub generously on both sides of the fish.

       
    • If using whole fish, sprinkle 2 tsp of the spice rub inside the cavity.

       
  4. Add zest: Squeeze half a lemon over the fish.

     
  5. Final touch: Season with salt and black pepper to taste.

     
  6. Marinate: Wrap or cover the fish and refrigerate for about 1 hour to allow the flavors to develop.

     

Step Two: Cook the Fish

  1. Heat olive oil or sunflower oil in a medium-sized frying pan over medium heat.
  2. Heat the oil to a medium heat (not smoking hot!),  hot enough to make the fish sizzle gently, 
  3. Add the fish. 
  4. Pan fry the fish as followsd:

    - Fillets/fish pieces: 3–4 minutes per side (depending on thickness)

     - Whole fish: 5–6 minutes per side (depending on size)

    -  Turn carefully to avoid breaking the fish. The skin should be crisp, and the flesh opaque and flaky.
