Big Mama's Spice Rub 
Lamb Chops Recipe

Ingredients

  1. 4 x Lamb chops
  2. 2 x Tablespoons of Big Mama Spice Rub (your favorite blend)
  3. Sea salt & freshly ground black pepper (to taste) 
  4. 2–3 tbsp olive oil or sunflower oil 
  5. 100 ml passata (or adjust to preference)

 

 

 

 

Step One:  Season & Marinate

  1. Generously massage Big Mama Spice Rub into the lamb chops.
  2. Sprinkle with sea salt and black pepper to taste.
  3. Wrap or cover the chops and refrigerate for at least 1 hour, or overnight for deeper flavor.

 

 

 

 

 

 

 

 

Step Two: Roast

  1. Preheat oven to 190°C (170°C fan) / Gas 5.
    Place lamb chops in a semi-deep roasting dish.
    Mix the olive oil with the passata and pour over the chops.
    Cover with foil and roast for 30 minutes.
    Remove foil and continue roasting for 10 minutes until the chops are beautifully browned.
    Remove from oven, loosely cover with foil, and let rest for 5 minutes before serving.

 

 

Serving Suggestion

Serve with roasted potatoes, steamed greens, or a fresh herb salad.
