Big Mama's Spice Rub Pan Fried Fish Recipe

Ingredients
- 1 whole fish or fillet (Sea Bass, Salmon, Mackerel, or Red Snapper)
- 2 x Tablespoons of Big Mama Spice Rub
- ½ lemon
- Salt & freshly ground black pepper
- 2–3 tbsp olive oil or sunflower oil
Step One: Prepare the Fish
- Clean: Wash and scale the fish thoroughly. Pat dry with kitchen paper.
- Score: If using whole fish, lightly score the skin at ½ inch (1 cm) intervals.
- Season:
- Rub Big Mama Spice Rub generously on both sides of the fish.
- If using whole fish, sprinkle 2 tsp of the spice rub inside the cavity.

- Add zest: Squeeze half a lemon over the fish.
- Final touch: Season with salt and black pepper to taste.
- Marinate: Wrap or cover the fish and refrigerate for about 1 hour to let the flavours develop.
Step Two: Cook the Fish
- Heat olive oil or sunflower oil in a medium-sized frying pan over medium heat.
- When the oil is hot enough to make the fish sizzle gently (but not smoking), add the fish.
- Cook for:
- Fillets: 3–4 minutes per side (depending on thickness)
- Whole fish: 5–6 minutes per side (depending on size)
- Fillets: 3–4 minutes per side (depending on thickness)
- Turn carefully to avoid breaking the fish. The skin should be crisp and the flesh opaque and flaky.
Serving Suggestions
- Option 1: Jersey Royal potatoes + steamed broccoli with a knob of butter
